🍅 Bruschetta Chicken Pasta 🍝
Ingredients:
2 boneless, skinless chicken breasts
2 tbsp olive oil
2 tsp Italian seasoning
Salt and pepper to taste
2 cups cherry tomatoes, halved
2 cloves garlic, minced
2 tbsp fresh basil, chopped
1/4 cup grated Parmesan cheese
8 oz penne pasta, cooked and drained
2 tbsp balsamic glaze or vinegar
Instructions:
1. Grill the Chicken:
Season chicken with olive oil, Italian seasoning, salt, and pepper. Grill or pan-sear over medium heat until cooked through (about 6–7 mins per side). Slice into strips.
2. Prepare the Bruschetta Mix:
In a bowl, combine cherry tomatoes, garlic, basil, and a drizzle of olive oil. Let it sit for 10 minutes.
3. Assemble the Pasta:
Toss the cooked penne pasta with the bruschetta mix and sliced grilled chicken.
4. Add Cheese & Balsamic:
Sprinkle Parmesan on top and drizzle with balsamic glaze.
5. Serve:
Serve warm or at room temperature with extra basil for garnish.
