🛒 Ingredients
For the Salad:
2 cups cooked pasta (penne, rotini, or bowties work best)
2 grilled chicken breasts (sliced)
2 cups chopped romaine lettuce
1/2 cup cherry tomatoes (halved)
1/3 cup shaved or shredded Parmesan cheese
1 cup croutons
Fresh cracked pepper (to taste)
For the Caesar Dressing (or use store-bought):
1/2 cup mayonnaise
1 tbsp Dijon mustard
1 garlic clove (minced)
2 tbsp lemon juice
1 tsp Worcestershire sauce
2 tbsp grated Parmesan
Salt & pepper to taste
1–2 tbsp milk or water (to thin, if needed)
👩🍳 Instructions
Cook the Pasta:
Boil pasta until al dente. Drain and rinse with cold water to stop cooking. Set aside to cool.
Grill the Chicken:
Season chicken with salt, pepper, garlic powder, and a little olive oil.
Grill or pan-cook until golden and fully cooked (internal temp 165°F / 74°C).
Let rest, then slice thinly.
Make the Dressing (if homemade):
Whisk together mayo, mustard, garlic, lemon juice, Worcestershire, Parmesan, salt, and pepper.
Add a splash of water or milk for desired consistency.
Assemble the Salad:
In a large bowl, combine pasta, romaine, tomatoes, chicken, Parmesan, and croutons.
Drizzle with Caesar dressing and toss to coat.
Serve:
Garnish with extra Parmesan and fresh black pepper. Serve chilled or room temp.
